Buffalo mozzarella with balsamic glazed plums

One of my favorite foodie websites Food52, is conducting a contest this week for Best Mozzarella recipe and seeing as I just got a nice big hunk of locally made stuff I figured I'd try and enter. Mine is a very simple recipe that all cooks can do and it yields delicious results, keeping the cheese the star of the show.
